Job Description

The Bar Assistant Manager will play a pivotal role delivering world-class guest experiences across the Mondrian property. Supporting the Bar Manager, you will oversee day-to-day operations, ensuring the highest standards of service, operational excellence, and a team culture that reflects Mondrian’s signature hospitality. From overseeing beverage preparation and managing stock, to providing staff training and controlling costs while driving revenue. You will lead by example, enhancing guest engagement and fostering business success. With a focus on team leadership, service standards, and operational efficiency, you will help shape a guest experience that meets the highest expectations. 

Main Duties/Responsibilities:  

  • Deliver exceptional guest service at all times, promptly and professionally addressing inquiries, concerns, and complaints. 
  • Build and maintain strong relationships with loyalty program members and regular guests, providing personalised service and incentives to enhance guest loyalty. 
  • Supervise and support bar staff, ensuring adherence to standard operating procedures and consistently high service standards. 
  • Maintain in-depth knowledge of all beverage offerings, including cocktails, wines, spirits, and snacks, to provide informed recommendations to guests. 
  • Lead by example in preparing and serving high-quality cocktails, coffee, and other beverages, ensuring adherence to established recipes and presentation standards. 
  • Develop and introduce seasonal cocktails that align with current trends and guest preferences. 
  • Develop a comprehensive understanding of the hotel’s bar and restaurant operations, collaborating with Food & Beverage leadership to ensure seamless service across all meal periods. 
  • Ensure compliance with all liquor licensing regulations, RSA requirements, and house policies. 
  • Train and mentor bar team members, fostering a culture of excellence, professional growth, and adherence to company policies. 
  • Oversee operations at the pool club during peak periods, ensuring efficient service, guest satisfaction, and the effective use of QR codes for streamlined ordering and payments. 
  • Assist in preparing staff rosters, ensuring optimal staffing levels that balance operational needs and cost efficiency, with final approval from senior management. 

Qualifications

  • Minimum of 2 years of relevant experience in a bar or hospitality venue in a similar role.  
  • Current RSA certification (Responsible Service of Alcohol) required.   
  • Strong operational acumen, with the ability to balance hands-on service with strategic oversight.  
  • Passion for hospitality, service excellence, and creating unforgettable guest moments. 
  • Knowledge of Micros Simphony POS is highly advantageous.  
  • Exceptional problem-solving and decision-making skills in high-energy environments.  
  • Strong knowledge of a variety of beverages including beer, wine, spirits and cocktails. 
  • Ability to work a variety of shifts including evenings, weekends and public holidays.   
  • Must have valid Australian Working Rights.
