The 25hours Hotel The Olympia is the first 25hours in Australia, located in the vibrant suburb of Paddington in Sydney. The building itself was formerly a popular cinema, which opened in 1911 and reflects its rich history throughout the guest experience.

The hotel has 109 rooms on six floors and will feature event and meeting areas, an iconic London restaurant, The Palomar, a coffee house featuring the popular Baker Bleu pastries, a cozy cocktail and wine bar and rooftop bar with city skyline views. The ground floor outlets are in collaboration with award-winning London-based creative hospitality studio, Studio Paskin. A new era awaits at the 25hours Hotel The Olympia which will shape and transform Paddington, welcoming a vibrant and diverse team, bringing its vision to life.

As Pastry Chef at The Palomar, you’ll take the lead on all things sweet – crafting beautiful, bold desserts that reflect the fire, soul, and creativity of our kitchen. From developing new ideas to executing them with precision, you’ll bring joy to every plate and leave guests with a lasting final impression. Job Description

This is your daily contribution to turn our culinary experience into something exceptional ...

  • Lead the pastry section from prep to service, delivering consistently high-quality desserts.
  • Design, develop, and refine dessert menus in collaboration with the Head Chef, bringing seasonality, creativity, and balance.
  • Maintain impeccable standards in presentation, taste, and technique.
  • Oversee the full pastry mise en place and production schedule, ensuring efficiency and minimal waste.
  • Manage stock levels and ordering for pastry ingredients, keeping within budget.
  • Uphold the highest food safety and hygiene standards in the pastry area.
  • Mentor and train junior team members, sharing knowledge and inspiring growth.
  • Collaborate with the wider kitchen team to ensure seamless service and a unified culinary offering.
  • Stay on top of trends and techniques to keep the pastry menu fresh, relevant, and exciting.

Qualifications

We’re looking for someone who brings both technical skill and creative spark:

  • You have experience in a senior pastry role within high-end or high-volume kitchens.
  • You’re confident leading a pastry section independently and managing day-to-day operations.
  • You have a deep understanding of classic techniques and a passion for modern flavours and presentation.
  • You’re detail-oriented, organised, and thrive under pressure.
  • You have strong knowledge of food safety, allergen awareness, and kitchen best practices.
  •  You love experimenting, learning, and delighting guests with unexpected touches.
