Job Description

The Executive Sous Chef reports to the Executive Chef and is the second-in-command in the kitchen. They are responsible for assisting the Executive Chef with all aspects of kitchen operations, including developing and implementing menus, training and supervising staff, and ensuring the quality and consistency of all food and beverage items. The Executive Sous Chef must have a deep understanding of all aspects of culinary operations, as well as strong leadership and organizational skills.

What you will be doing:

>Assist the Executive Chef with all aspects of managing and coordinating the daily operations of all culinary operations, including kitchens and stewarding

>Assist in preparing and managing annual budget, reporting variances as required and amending operation based on business needs

>Oversee the day-to-day operations of the kitchen in the absence of the Executive Chef

>Analyzing market trends & needs and customize offerings and operations, balancing local cultural traditions and international dining evolvements

>Developing, managing and directing menu planning for all property

>Execute training programmes for all culinary colleagues on all aspects of the operation, including leading the Culinary Apprenticeship Programme

>Recruiting, training, scheduling, developing and managing the team, including conducting performance evaluations and appropriate departmental orientations

>Ensuring all kitchen equipment is operating efficiently and an effective preventative maintenance programme is maintained

>Managing inventory through a scheduled control programme

>Managing queries and complaints promptly and implement corrective actions as required

>Develop and maintain collaborative relationships with all stakeholders

>Ensuring total compliance with all operational standards, policies and procedures, including health & safety, corporate standards and financial standards

>Be available to meet with guests, clients or other stakeholders as required

>Other duties as assigned


Qualifications

>Bachelor's degree in culinary arts or a related field or equivalent education level

>5+ years of experience in a culinary leadership role or equivalent, with a focus on the luxury hospitality industry

>Strong understanding of high volume culinary operations and management

>Experience with developing and implementing new menus and promotions

>Excellent customer service skills

>Excellent leadership and communication skills

>Demonstrated creative culinary skills are required

>Strong interpersonal and communication skills (verbal and written, fluent in English) and work cohesively and strategically

>Knowledge of food safety regulations and programs

>Strong experience with preparing and executing budgets

>Strong work ethic, highly responsible, reliable and the ability to work shifts, extended hours including evenings, weekends and public holidays is required

 


Additional Information

Schedules:  Must be able to work flexible shifts including nights, weekends and public holidays.
