Job Description

We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Executive Pastry Chef. The Executive Pastry Chef is responsible for leading all pastry and dessert operations across Fairmont Southampton’s diverse culinary portfolio, including restaurants, lounges, banquets, in-room dining, and special events. This role demands a visionary pastry professional with masterful technique, creativity, and the ability to anticipate and respond to culinary trends.

The Executive Pastry Chef oversees menu development, production quality, team leadership, cost control, and operational excellence all while delivering elevated, memorable pastry experiences that complement the resort’s luxury standards.

What you will be doing:

Culinary Leadership & Creative Development

  • Develop, design, and refine pastry and dessert menus for all outlets, buffets, banquets, and special events.
  • Stay informed of global pastry trends, modern techniques, and guest preferences, integrating them into innovative offerings.
  • Lead recipe development, presentation standards, and plating techniques to ensure consistent luxury-level execution.
  • Create bespoke pastry displays, amenities, celebration cakes, and event-driven showpieces.
  • Ensure standardized recipes, plating guides, and production specifications are documented and consistently followed across all outlets.
  • Oversee allergen awareness, dietary requirements, and special pastry requests, ensuring accurate communication and controls.

Pastry Operations Management

  • Direct daily pastry production, ensuring consistent quality, portioning, and product availability.
  • Maintain the highest levels of cleanliness, organization, hygiene, and food safety in all pastry work areas.
  • Ensure all equipment is functioning properly and coordinate with Engineering for regular maintenance and repairs.
  • Oversee and maintain an efficient mise-en-place and production schedule that supports high-volume operations.
  • Ensure accurate portion control and yield management to support quality consistency and cost targets.
  • Maintain production logs, temperature records, and compliance documentation in line with food safety standards.

Team Leadership, Training & Culture

  • Recruit, train, mentor, schedule, and develop pastry team members, fostering a culture of excellence, creativity, and collaboration.
  • Conduct performance evaluations and support continuous talent development aligned with Accor’s leadership standards.
  • Provide ongoing training in pastry fundamentals, advanced techniques, food safety, and presentation skills.
  • Provide real-time coaching and corrective feedback during service and production periods.
  • Support succession planning and development of high-potential pastry team members.
  • Address performance or conduct issues in line with company procedures and escalate when required.
  • Inspire a positive, professional, and inclusive work environment.

Financial & Resource Management

  • Manage departmental budgets, including labor planning, ingredient sourcing, and cost control.
  • Oversee inventory management, ordering systems, and monthly cost reporting.
  • Ensure efficient use of materials and minimize waste through accurate forecasting and sustainable practices.
  • Collaborate with Purchasing to identify premium, sustainable, and cost-effective ingredients.
  • Analyze food cost variances, waste trends, and productivity metrics, implementing corrective actions as needed.
  • Support annual budgeting, forecasting, and capital planning related to pastry operations.

Guest Experience & Brand Standards

  • Ensure pastry offerings consistently reflect Fairmont and Accor brand standards of quality, creativity, and luxury.
  • Engage with guests, event clients, and VIPs as needed to customize experiences and execute bespoke pastry requests.
  • Respond promptly to guest feedback, implementing corrective actions where necessary.
  • Maintain discretion and professionalism during all guest-facing and VIP interactions.
  • Apply service recovery principles when addressing pastry-related guest feedback or concerns.

Collaboration & Cross-Department Support

  • Work closely with the Executive Chef, Banquet Chef, Restaurant Chefs, and F&B leadership to ensure seamless service and menu cohesion.
  • Partner with Events, Sales, and Marketing teams to design pastries and displays for promotions, celebrations, and brand activations.
  • Participate in culinary leadership meetings and contribute to long-term strategic planning.
  • Flexibly support culinary operations across multiple outlets or events at management discretion to meet business needs.

 


Qualifications

Experience

  • 3+ years in an Executive Pastry Chef or senior pastry leadership role, ideally within luxury hotels or high-end resorts.
  • Experience supporting multi-outlet resort operations, banquets, and large-scale events is an advantage.
  • Demonstrated success managing high-volume and high-end pastry operations.

Education

  • Bachelor’s degree or diploma in Culinary Arts, Patisserie & Baking, or a related field is preferred.
  • Professional pastry certifications (e.g., Le Cordon Bleu, Culinary Institute of America, equivalent) are an asset.

Competencies, Knowledge & Skills

  • Mastery of pastry and baking fundamentals, advanced confectionery techniques, and modern pastry trends.
  • Strong leadership, communication, and team-building skills.
  • Proven menu development and culinary innovation skills.
  • Excellent organizational and time-management abilities.
  • Strong knowledge of food safety standards and HACCP requirements
  • Proficiency with inventory management and basic budgeting.
