Job Description

  • Oversee the preparation, cooking, and presentation of all Thai dishes across the resort, ensuring consistency, quality, and authenticity.
  • Supervise and support kitchen members in the Thai section, including training, mentoring, and providing guidance on Thai cuisine techniques and standards.
  • Collaborate with the Executive Chef and Executive Sous Chef to develop new Thai menu items and seasonal specials.
  • Ensure that all Thai dishes are prepared according to HACCP standards, focusing on food safety and hygiene at all times.
  • Manage and maintain the highest standards of food quality, taste, and presentation for all Thai dishes, including those served in banquet settings.
  • Assist in the management of food inventory and ordering of ingredients for the Thai kitchen section.
  • Monitor food waste and implement food waste management strategies in alignment with sustainability practices.
  • Support sustainability initiatives by reducing food wastage and ensuring the efficient use of resources in the kitchen.
  • Ensure that the Thai section kitchen is clean, organized, and operates efficiently in accordance with resort and safety standards.
  • Assist with banquet preparation, ensuring high-quality Thai dishes are served during events and functions.
  • Work closely with other kitchen sections to ensure smooth coordination for daily operations and special events.
  • Maintain accurate records and reports regarding food production, food safety, and waste management.

Qualifications

  • Proven experience as a Jr. Sous Chef, Chef de Partie, or in a similar role with a focus on Thai cuisine.
  • Strong knowledge of Thai cooking techniques, ingredients, and authentic dishes.
  • In-depth understanding of HACCP and food safety regulations.
  • Experience with food waste management and sustainability practices in the kitchen.
  • Ability to manage a team and work under pressure in a fast-paced environment.
  • Strong organizational and communication skills.
  • Ability to work collaboratively with other team members and departments.
  • Passionate about food, with a commitment to maintaining high culinary standards.
  • Ability to create and innovate within Thai cuisine while respecting tradition.
  • Fluency in Thai and English is required.
  • Flexible and able to work shifts, including weekends and holidays.
