    Job Description

    The Sous chef at Green Coast Hotel, MGallery will be responsible for creating delicious Southeast Asian Dishes, plus Sushi & Sashimi of the highest quality and consistency for our demanding guests.
    The chef will be responsible for planning the menu, ensuring that each dish is nutritious and cost-effective, and collaborating with a team of kitchen staff to deliver food that meets the highest quality standards.

    To ensure success in your role as Sous Chef, you should be an excellent leader with great organizational skills and impeccable time management. Top candidates will also be creative individuals, capable of creating dishes that set us apart and keep people coming back for more.

    Main Responsibilities and Duties

    • Prepare food prep, cook, plate meals, and presentation of menu items according to the restaurant's standardsMonitor the flow of service and respond to customer needs or requests.
    • Ensure that Southeast Asian Dishes, Sushi & Sashimi food quality, freshness, and temperature are maintained.
    • Maintain, clean kitchen area by keeping dishes, utensils, and equipment ready to use, as well as cleaning surfaces and windows when necessary.
    • Stock inventory as needed.
    • Ensure that food costs are kept within budgeted limits.
    • Keep records of inventory stock orders.
    • Report any discrepancies to management.Prepare and present high-quality Southeast Asian Dishes, Sushi & Sashimi dishes, showcasing authentic flavors and techniques.
    • Develop and maintain a diverse menu that highlights traditional and contemporary Southeast Asian Dishes, Sushi & Sashimi.
    • Ensure consistency in taste, portioning, and presentation across all dishes.
    • Oversee kitchen operations, including ingredient selection, inventory management, and quality control.
    • Always maintain compliance with hygiene and safety standards.
    • Comply with federal and local health regulations including sanitation, safety, nutrition standards, and food safety code enforcement policies.
    • Maintain a safe work environment. Adhere to company safety policies and procedures.

     


    Qualifications

    • At least 5 years’ proven experience as an Asian Sous Chef or Asian Chef de Partie specializing in Southeast Asian Dishes, Sushi & Sashimi cuisine, preferably in a luxury hospitality environment.
    • Deep knowledge of traditional Southeast Asian Dishes, Sushi & Sashimi recipes, spices, and cooking techniques.
    • Work experience as a Sous Chef or Junior Sous Chef in Southeast Asian Dishes, Sushi & Sashimi cuisine.
    • Ability to work both fast and accurately.
    • Team spirit.
    • Flexibility to take on various shifts.
    • Certification from a culinary school is a plus.
    • Experience at Accor is an advantage.
