As a Pastry Cook 1, you will take a leading role in the preparation and presentation of plated desserts, pastries, and baked goods for our restaurant outlets. What you will be doing:
- Lead the daily production of desserts and pastry items for the hotel’s restaurant outlets, ensuring all products meet Fairmont’s high standards of quality, taste, and presentation.
- Prepare a variety of desserts, including plated items, pastries, cakes, tarts, and frozen components, while maintaining portion and recipe consistency.
- Assist in developing new dessert concepts, seasonal offerings, and menu enhancements in collaboration with the Pastry Chef.
- Maintain excellent product rotation, labeling, and storage practices to ensure freshness and minimize waste.
- Organize and prioritize daily mise en place to ensure smooth restaurant service.
- Ensure work areas, tools, and equipment are clean, sanitized, and well maintained at all times.
- Adhere strictly to all food safety, sanitation, and occupational health standards as outlined by the hotel and local regulations.
- Ensure all ECOSURE documentation is accurately completed, including temperature logs, labeling, and cleaning schedules.
- Collaborate effectively with the restaurant and banquet teams to ensure seamless coordination and timely service

Your experience and skills include:
- Minimum 4–5 years of professional pastry experience, with a strong focus on plated desserts and restaurant service.
- Demonstrated skill in modern and classic pastry techniques, including mousses, sponges, tarts, sauces, and garnishes.
- Proven ability to manage multiple tasks and maintain consistency under pressure during service periods.
- Strong leadership and communication skills, with the ability to mentor and support junior team members.
- A creative mindset with the ability to contribute ideas for new dessert concepts and menu items.
- Excellent organizational and time management skills.
- Completion of a recognized pastry or culinary program is preferred.
- Flexibility to work varied shifts, including early mornings, evenings, weekends, and holidays.
