Job Description

At Mercure Melbourne Doncaster, our Food & Beverage is where hospitality comes alive. We are seeking a passionate Food & Beverage Manager with proven experience in F&B operations to lead our team and oversee day-to-day services, delivering seamless and memorable guest experiences.

Reporting to the General Manager, this is a fantastic opportunity for an experienced F&B professional to take on a leadership role overseeing F&B operations.

 

Key Responsibilities

  • Lead and manage Food & Beverage operations across the hotel.
  • Ensure all services meet Mercure’s high standards of hospitality and guest experience.
  • Work closely with the Executive Chef and F&B Operations team to deliver exceptional menus, service, and execution.
  • Inspire and develop the team, fostering a culture of excellence, engagement, and accountability.
  • Oversee budgeting, P&L, inventory, and operational efficiency to drive performance.
  • Analyse guest feedback, market trends, and competitor insights to improve experiences.
  • Collaborate with Marketing to promote the hotel’s F&B offering.
  • Ensure compliance with, health & safety, and licensing requirements.

Build strong relationships with suppliers, partners, and the local community


Qualifications

  • Proven experience in Food & Beverage management.
  • Strong knowledge of high-volume operations, banquets, and multi-outlet service.
  • Inspirational leadership style that builds engagement, accountability, and team pride.
  • Experience managing labour, stock, revenue, and service performance.
  • Passion for food, wine, and delivering great guest experiences.
  • Excellent communication, organisational, and stakeholder management skills.
  • Full working rights in Australia are requiredno sponsorship available.
