Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers.  Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms. The hotel also features the amazing and extremely popular venues of Goldfinch Restaurant and Street Cafe, Sixteen Antlers Rooftop Bar as well as KG Bar & In Room Dining.

Our Food & Beverage department is seeking a new leader, who will be responsible guiding the team to deliver exceptional food & beverage service, across our unique venues & outlets.


Job Description

Reporting to the Hotel Manager with access to the General Manager, & close collaboration with other leaders, you will guide the operations, with strategic oversight to deliver outstanding guest experiences at each & every interaction.

What the role is all about:  

  • Lead & develop the team in a hands on manner
  • Focus on the consistent delivery of excellence across all venues.
  • Develop & execute strategy
  • Ensure compliance with budgetary guidelines and operational efficiency
  • Maximise profitability & drive revenue
  • Maintain wage costs in line with budget
  • Be knowledgeable of and operate within the appropriate outlet and hotel liquor licensing guidelines and House Management Policies
  • Ensure compliance with all health and safety regulations.
  • Understand industry trends, externals factors & competitor behaviours

Qualifications

We're looking for someone to bring their skill & knowledge, together with an outstanding energy to our hotel. The ideal candidate will possess the following:

  • Proven experience in high volume operations
  • Strong expertise in large event service
  • Ability to lead, train, and manage a diverse team.
  • Business acumen & financial insight
  • Excellent organisational and time management abilities.
  • Knowledge of food safety, sanitation, and health regulations.
  • Ability to work flexible hours, including evenings, weekends, and holidays as needed.
  • An obsession with providing excellent guest service
  • Exceptional communication skills
  • Attention to detail
  • High standard of personal presentation
  • Valid QLD RSA & RMLV
