Job Description

Prime Function

Assist in the preparation and presentation of authentic South Indian dishes, ensuring the highest standards of quality, consistency, and hygiene as per hotel guidelines. Support the Chef de Partie in supervising kitchen operations and maintaining efficient workflow within the assigned section.

Key Responsibilities

Kitchen Operations

  • Prepare and present South Indian cuisine (breakfast, à la carte, and buffet) as per standard recipes and presentation guidelines.

  • Assist in planning daily mise-en-place and ensure readiness for all meal services.

  • Follow instructions from the Chef de Partie/Executive Chef on menu execution and modifications.

  • Ensure consistency in taste, portioning, and presentation of all dishes.

  • Maintain proper storage, labeling, and handling of ingredients in line with HACCP standards.

Kitchen Planning & Inventory

  • Support in estimating daily requirements and assist in inventory control.

  • Ensure adequate stock levels by coordinating with stores for timely requisition.

  • Minimize wastage through proper planning and efficient utilization of ingredients.

People Management

  • Work collaboratively with team members to ensure smooth kitchen operations.

  • Assist in training junior staff on South Indian cooking techniques and safety practices.

  • Maintain discipline, grooming, and hygiene standards within the team.

Operational Management

  • Ensure cleanliness, sanitation, and hygiene standards are consistently followed.

  • Monitor food quality, taste, and presentation during service.

  • Assist in maintaining kitchen equipment and report any issues promptly.

  • Adapt to operational needs by taking up additional duties as assigned by superiors.

Financial Awareness

  • Support in controlling food cost by minimizing wastage and ensuring optimal use of resources.

  • Maintain portion control and reduce pilferage.

Menu Contribution

  • Assist in developing South Indian menus under the guidance of senior chefs.

  • Consider local preferences, seasonal ingredients, and current food trends.

Hygiene, Safety & Compliance

  • Follow all HACCP procedures and maintain cleanliness in work and storage areas.

  • Adhere to safety guidelines while handling kitchen equipment.

  • Ensure compliance with hotel policies, fire safety norms, and environmental practices.

  • Contribute to sustainability initiatives such as waste segregation and energy conservation.

General Responsibilities

  • Maintain high standards of personal grooming and hygiene.

  • Report any issues that may impact kitchen operations or guest satisfaction to superiors.

  • Ensure guest satisfaction through consistent food quality and timely service.

 


Qualifications

  • Diploma or certification in Culinary Arts or equivalent.

  • Minimum 1–2 years of experience in a similar position, preferably in a hotel or fine-dining restaurant.

  • Strong knowledge of South Indian cuisine techniques and ingredients.

  • Good understanding of food hygiene and safety standards.

  • Ability to work under pressure and in a fast-paced environment.

  • Positive attitude, team player, and willingness to learn.
