Job Description

The Commis 3 is responsible for assisting in the preparation, baking, and presentation of pastries, desserts, breads, and other baked goods. Under the supervision of the senior chefs, the role ensures that the products meet the quality standards, are prepared in a timely manner, and adhere to health and safety regulations. This position offers an opportunity to learn various techniques and gain experience in the pastry and bakery field.

Responsibilities

  • Assist in preparing dough, batters, icings, fillings, and other components needed for baked goods and pastries.
  • Follow recipes and instructions from senior pastry chefs to create consistent and high-quality products.
  • Prepare ingredients for various pastry and bakery items, ensuring that all items are correctly portioned and measured.
  • Help bake cakes, cookies, pastries, breads, and other items according to established recipes and techniques.
  • Assist in decorating and assembling finished products, ensuring proper presentation in line with the restaurant's standards.
  • Ensure that all pastries, baked goods, and desserts meet the required quality standards for taste, texture, and appearance.
  • Monitor product quality during production and make adjustments as needed to ensure consistency.
  • Set up the pastry station before service by organizing ingredients, tools, and equipment needed for baking.
  • Keep the pastry and bakery section clean, tidy, and well-stocked, ensuring a smooth workflow.
  • Clean and sanitize tools, utensils, and workstations after use to maintain high hygiene standards.
  • Follow food safety regulations and hygiene practices to ensure the kitchen remains clean and free from contamination.
  • Assist in managing the inventory of pastry and bakery ingredients, ensuring proper stock levels are maintained.
  • Help with the organization and rotation of ingredients to minimize waste and ensure fresh supplies.
  • Report any low stock levels or damaged goods to the senior chefs.
  • Work effectively as part of a team in the pastry and bakery section, contributing to the smooth operation of the kitchen.
  • Perform any other duties or responsibilities as assigned by management to support the effective operation of the department and the broader goals of the property.

Qualifications

Experience

  • Experience: Minimum of 1 year of pastry / bakery experience preferably in a high-end restaurant or a luxury hospitality environment.
  • Passion for baking, desserts, and pastry arts.
  • Strong attention to detail and commitment to producing high-quality products.
  • Basic knowledge of baking techniques, food safety, and hygiene standards.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Excellent communication and teamwork skills.
  • Willingness to learn and develop new skills in the pastry and bakery field.
  • Willingness to work flexible hours, including nights, weekends, and holidays.

Physical Requirements

  • Ability to stand for long periods and work in a busy kitchen environment.
  • Comfortable working with hot ovens, stoves, and baking equipment.
  • Ability to work in a fast-paced environment, particularly during peak times.
