Job Description

We are seeking a talented and experienced Chef de Partie - Gardemanger to join our culinary team in Mumbai, India. As a key member of our kitchen brigade, you will be responsible for overseeing the cold kitchen section, ensuring the highest standards of food quality and presentation.

  • Prepare and present a wide variety of cold dishes, including salads, appetizers, canapés, and charcuterie
  • Develop and execute new menu items in collaboration with the Executive Chef
  • Ensure proper food storage, handling, and sanitation practices are followed in the cold kitchen
  • Manage inventory and minimize waste while maintaining quality standards
  • Train and supervise junior kitchen staff in cold food preparation techniques
  • Collaborate with other kitchen sections to ensure smooth service operations
  • Maintain a clean and organized work environment
  • Assist in menu planning and recipe development for cold dishes
  • Adhere to all food safety regulations and company policies

Qualifications

  • Culinary degree or diploma from a recognized institution
  • Minimum 2-3 years of experience as a Chef de Partie or in a similar role
  • Proven expertise in cold food preparation and presentation
  • Strong knowledge of food safety and sanitation practices
  • Excellent knife skills and proficiency in various cutting techniques
  • Experience in high-volume or fine dining restaurants
  • Ability to work efficiently in a fast-paced environment
  • Strong organizational and time management skills
  • Team player with excellent communication abilities
  • Creativity and passion for culinary arts
  • Up-to-date Food Safety Certification
  • Knowledge of various cuisines and current culinary trends
  • Physical stamina to stand for extended periods and lift heavy items
  • Flexibility to work varying shifts, including weekends and holidays
