Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers.  Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms. The hotel also features the amazing and extremely popular venues of Goldfinch Restaurant and Street Cafe, Sixteen Antlers Rooftop Bar as well as KG Bar and an Executive Lounge.

Our kitchen brigade is responsible for providing exceptional food service and coordinating the smooth guest arrival and departure experience, as well as providing friendly and knowledgeable service to all hotel visitors.


Job Description

Reporting to the Executive Chef with access to the Hotel Manager, & close collaboration with our Event Co-ordinators the Sous Chef will assist in leading a passionate team to deliver magnifique culinary experiences, every time.

What the role is all about:  

  • While focused on Conferencing & Events, you will support other key areas of culinary as required
  • Supervise food preparation, cooking, and plating for banquets and catered events.
  • Ensure timely service and coordination with front-of-house staff.
  • Maintain high presentation standards and adherence to dietary and allergy accommodations.
  • Monitor portion control and waste management to maintain food cost efficiency.
  • Assist in inventory management, ordering, and receiving of ingredients.
  • Ensure compliance with budgetary guidelines and operational efficiency
  • Enforce proper food handling, storage, and sanitation practices.
  • Ensure compliance with all health and safety regulations.
  • Oversee cleanliness and maintenance of banquet kitchen equipment and workspaces

Qualifications

We are looking for someone to bring their skill & knowledge, together with an outstanding energy to our hotel. The ideal candidate will possess the following:

  • Proven experience as a Sous Chef or Banquet Chef in a high-volume banquet or catering setting.
  • Strong culinary skills with expertise in large-scale food production and event catering.
  • Ability to lead, train, and manage a diverse kitchen team.
  • Excellent organizational and time management abilities.
  • Knowledge of food safety, sanitation, and health regulations.
  • Ability to work flexible hours, including evenings, weekends, and holidays as needed.
  • Culinary degree or relevant certification preferred.
  • An obsession with providing excellent guest service
  • Exceptional communication skills
  • Attention to detail
  • High standard of personal presentation
