Job Description

We are seeking an experienced, passionate, and detail oriented Sous Chef to join our culinary team at Cucina Restaurant. In this role, you will oversee daily kitchen operations, ensuring authenticity, consistency, and the highest standards of Italian cuisine in every dish served.

  • Oversee and manage daily kitchen operations
  • Ensure all dishes are prepared and presented according to restaurant standards for quality, taste, authenticity, and presentation
  • Supervise, train, and mentor kitchen team members, including junior staff
  • Oversee preparation for à la carte service, buffet, and special events
  • Maintain cleanliness, organization, and efficiency in all kitchen areas
  • Control food costs by minimizing waste and ensuring proper portioning and ingredient usage
  • Lead menu planning, recipe development, and innovation with a strong Italian culinary identity
  • Ensure compliance with hygiene, sanitation, and kitchen safety standards at all times
  • Monitor inventory levels, place orders, and ensure proper storage and stock rotation (FIFO)
  • Take full responsibility for kitchen operations in the absence of senior leadership

Qualifications

  • Minimum 3–5 years of experience as a Sous Chef or in a similar role within an Italian restaurant, fine dining establishment, or luxury hotel
  • Strong expertise in authentic Italian cuisine, including pasta, risotto, sauces, and traditional cooking techniques
  • Proven leadership skills with the ability to manage and motivate a team in a fast-paced environment
  • Highly detail-oriented with a strong commitment to quality, consistency, and authenticity
  • Ability to work under pressure in a high-volume kitchen
  • Creative mindset with a passion for Italian culinary traditions and modern interpretations
  • Solid understanding of food safety, hygiene, and sanitation standards (HACCP knowledge preferred)
  • Strong communication and teamwork skills
  • Flexible to work shifts, weekends, and public holidays
