Company Description

Tilda is the recently hatted restaurant by House Made Hospitality, located on the ground floor of the newly renovated Sofitel Sydney Wentworth. It sits as one of four venues within the precinct, and adds to House Made Hospitality's varied and fast-evolving portfolio which includes Lana, Grana, Martinez and Promenade Bondi Beach. An "Australian Grill", it aims for exceptional dining with a local and seafood focus, and after only a month in operation, is already buzzing and vibrant - trading all day (from breakfast) and all week.

Tilda features a 110-seat dining space, including an intimate 12-person private dining room. The thoughtfully curated wine list focuses on Australia’s finest winemakers, regions and varietals, alongside an expertly selected range of old-world wines.


Job Description

We are on the lookout for a casual Sommelier.

As our Sommelier, you are responsible for all things wine and development of the culture of wine within your venue, working alongside a team of wine and beverage professionals and reporting to the Head Sommelier.

This role will have responsibility for executing the Head Sommelier’s wine list and assisting with suggestions, ideation and on-going maintenance. You will always be promoting wine experiences, while maintaining high standards of processes and procedures throughout the venue and back of house.

You should be constantly improving your own knowledge of wine, and mentoring and training all those around you in a both structured and on-the-job capacity. Development of a wine/ beverage team; professional culture and being able to train on all things wine is a priority.

Recruitment of a like minded wine team also comes under your responsibility. Utilising your professional network, LinkedIn and/or social media to recruit and responding to recruitment drives are part of your role.


Qualifications

  • Expert understanding of wine.
  • Expert understanding of spirits and cocktails.
  • At least 3 years experience as a sommelier in a restaurant environment.
  • At least 3 years experience in a CBD/corporate hospitality environment.
  • Ability to fulfill the role of a wine expert communicator in a 150 pax busy restaurant service.
  • Experience in writing and delivering training and development.
  • Ability to understand and manage COGS
  • Understanding of supplier contracts and compliance topics.
  • Intricate knowledge of BOH and FOH venue operations
  • Strategic beverage revenue-driving experience
  • Commitment to undertake growth and development, in line with Sofitel and House Made Hospitality values.
