Job Description

  • Prepare and present a wide variety of cold dishes including salads, charcuterie, terrines, pâtés, canapés, and appetizers with precision and creativity.
  • Ensure all cold food items meet the hotel’s quality standards in terms of taste, presentation, and hygiene.
  • Maintain cleanliness and organization of the cold kitchen area, adhering strictly to food safety and sanitation regulations.
  • Collaborate with the Executive Chef to develop seasonal menus and special event offerings.
  • Monitor stock levels and assist in inventory control, ensuring freshness and minimizing waste.
  • Train, mentor, and supervise junior kitchen staff in cold kitchen techniques and hotel standards.
  • Coordinate with other kitchen sections to ensure smooth service and timely delivery of dishes.
  • Stay updated on culinary trends and incorporate innovative techniques and ingredients into the menu.
  • Assist in cost control by managing portion sizes and optimizing ingredient usage.
  • Participate in daily briefings and contribute to continuous improvement in kitchen operations.

Qualifications

  • Solid experience as a Garde Manger or in a similar role within upscale hotel or fine dining environments.
  • Culinary degree or equivalent professional certification.
  • Expertise in cold food preparation, artistic plating, and modern presentation techniques.
  • Exceptional attention to detail with a strong sense of aesthetics and flavor balance.
  • Proven ability to perform under pressure, collaborate effectively with colleagues, and lead a team with confidence and professionalism.
