Job Description

The Director of Food & Beverage is responsible for leading all culinary, bar, and restaurant operations within the hotel, ensuring an exceptional guest experience that reflects the lifestyle and creative spirit of Ennismore. This is a senior leadership role with full accountability for F&B strategy, concept execution, team development, and revenue generation. During the pre-opening phase, this role will be instrumental in shaping the hotel's dining identity and positioning it as a standout destination in the region.

Pre-Opening:

Work closely with brand and design teams to develop and implement F&B concepts that reflect the hotel's positioning and lifestyle ethos.

Recruit, onboard, and train the F&B team, ensuring alignment with brand culture and service standards.

Oversee pre-opening setup of all restaurants, bars, kitchens, and banquet operations including OS&E planning, layout review, and licensing.

Develop menus in collaboration with chefs and beverage leads that reflect the property's culinary identity and local inspirations.

Establish supplier relationships, procurement strategies, and quality standards.

Coordinate with marketing and PR teams on launch plans, F&B branding, and promotional campaigns.

 

Operational:

Lead all day-to-day F&B operations across restaurants, in-room dining, banquets/events, and bars.

Drive financial performance, ensuring cost controls, profit margins, and revenue targets are met or exceeded.

Ensure exceptional guest experience through creative offerings, service excellence, and consistent quality.

Collaborate with culinary, mixology, and service teams to maintain innovation, seasonal menus, and trend-forward experiences.

Monitor guest feedback and implement continuous improvement strategies.

Maintain high levels of hygiene, health & safety, and operational compliance across all outlets.

 

Team Leadership:

Build and lead a high-performing F&B team through coaching, performance management, and development programs.

Foster a positive and inclusive workplace culture in line with Ennismore’s values.

Ensure team grooming, discipline, and communication reflect brand standards.

Promote internal mobility and succession planning within the department.

 

Strategy & Brand:

Position the hotel as a key F&B destination in the North Coast by delivering innovative, local, and lifestyle-driven dining experiences.

Develop and execute strategies to attract both in-house guests and local clientele.

Partner with marketing to build F&B campaigns, social media content, collaborations, and events.

Ensure that all F&B touchpoints reinforce the brand story, visual identity, and guest promise.

 

Facilities & Support:

Oversee F&B-related infrastructure, maintenance, and cleanliness standards in all venues and back-of-house areas.

Ensure appropriate storage, inventory control, and kitchen safety systems are in place.

Liaise with Engineering and P&C teams to ensure smooth operations, maintenance, and team welfare (locker rooms, dining facilities, etc.).

Additional Responsibilities:

Prepare and submit reports, forecasts, and business reviews as required by management and corporate stakeholders.

Support internal and external audits, ensuring compliance with legal, food safety, and licensing regulations.

Perform all other duties and tasks as assigned by the leadership team.


Qualifications

  • Degree in Hospitality, Culinary Arts, Business, or related field preferred.
  • Minimum 7–10 years of progressive F&B leadership experience in luxury/lifestyle hospitality.
  • Proven success in pre-opening, F&B concept development, and team building.
  • Strong financial acumen and P&L responsibility.
  • Passion for creativity, food trends, and delivering unforgettable guest experiences.
  • Excellent leadership, communication, and interpersonal skills.
  • Knowledge of local food laws, safety standards, and labour regulations.
