Job Description

We are seeking a talented and passionate Sous Chef specializing in Moroccan cuisine to join our culinary team in Cairo, Egypt. As the Sous Chef, you will play a crucial role in creating authentic Moroccan dishes while assisting the Executive Chef in managing kitchen operations.

  • Assist the Executive Chef in overseeing daily kitchen operations and ensuring high-quality food production
  • Create and develop innovative Moroccan menu items, incorporating traditional flavors and modern techniques
  • Train and mentor kitchen staff on Moroccan cooking techniques, flavor profiles, and presentation
  • Ensure compliance with food safety and sanitation standards in the kitchen
  • Manage inventory, place orders, and control food costs
  • Collaborate with the culinary team to maintain consistency in food quality and presentation
  • Participate in menu planning, recipe development, and seasonal menu changes
  • Step in for the Executive Chef when necessary, managing all aspects of kitchen operations

Qualifications

  • Culinary degree or diploma from a recognized culinary school
  • Minimum 3-5 years of experience in a professional kitchen, with at least 2 years in a leadership role
  • Extensive knowledge and experience in Moroccan cuisine, ingredients, and cooking techniques
  • Strong understanding of Middle Eastern and North African cuisines
  • Excellent leadership and team management skills
  • Proficiency in menu planning, recipe development, and food cost control
  • Advanced culinary techniques and knife skills
  • Strong organizational and time management abilities
  • Creativity and passion for culinary innovation
  • Valid food safety certification
  • Fluency in English; ability to communicate in Arabic is a plus
  • Flexibility to work evenings, weekends, and holidays as required

Physical Aspects of Position (include but are not limited to): 

  • Constant standing and walking throughout shift.
  • Frequent lifting and carrying up to 30 lbs.
  • Occasional kneeling, pushing, pulling, lifting.
  • Occasional ascending or descending ladders, stairs and ramps.
