Job Description

We are seeking a talented and experienced Sous Chef to join our culinary team in Baghdad, Iraq. As the second-in-command of our main kitchen, you will play a crucial role in maintaining our high standards of food quality and kitchen operations.

 

  • Supervise food production and presentation to ensure quality and consistency.
  • Ensure all food is prepared as per standard recipes and hygiene standards.
  • Assist in planning, organizing, and directing food preparation in the kitchen.
  • Coordinate kitchen operations during service to ensure smooth workflow.
  • Maintain high levels of cleanliness, organization, and sanitation in all kitchen areas.
  • Lead and supervise kitchen team members, including Commis, CDPs, and other junior chefs.
  • Conduct daily briefings and ensure clear communication of menus, tasks, and expectations.
  • Assist in training, mentoring, and developing culinary staff.
  • Foster a team-oriented, supportive environment with a focus on continuous improvement.
  • Assist in monitoring food cost, portion control, and minimizing waste.
  • Participate in stock rotation, ordering, and inventory checks.
  • Ensure all products are stored correctly and used within expiry dates.
  • Collaborate with Executive Chef in menu planning, tastings, and specials.
  • Recommend improvements for menu items based on guest feedback and trends.
  • Enforce strict hygiene standards and HACCP procedures.
  • Monitor equipment maintenance and cleanliness.
  • Ensure compliance with local food safety and sanitation regulations.

Qualifications

 

  • Minimum 3-5 years of experience in a high-volume kitchen, with previous Sous Chef experience preferred
  • Advanced knowledge of culinary techniques, menu planning, and kitchen equipment operation
  • Strong leadership skills with the ability to manage and motivate a diverse team
  • Excellent organizational and time management abilities
  • Proficiency in inventory management and cost control
  • Up-to-date Food Safety Certification
  • Knowledge of various cuisines, particularly Middle Eastern and international
  • Ability to work in a fast-paced environment and handle high-pressure situations
  • Strong communication skills in English; knowledge of Arabic is a plus
  • Flexibility to work evenings, weekends, and holidays as required
