Job Description

We are seeking a highly skilled and experienced Head Butcher to join our main kitchen team in Baghdad, Iraq. As the Head Butcher, you will be responsible for overseeing all aspects of meat preparation, ensuring the highest quality standards are met, and leading a team of butchers in our busy kitchen environment.

  • Manage and supervise the butchery department, including staff training and scheduling
  • Execute expert cutting techniques for various types of meat, including beef, poultry, pork, and lamb
  • Ensure proper portioning, trimming, and preparation of meat products according to kitchen specifications
  • Maintain strict adherence to food safety and sanitation standards
  • Oversee inventory management, including ordering, receiving, and storage of meat products
  • Collaborate with the executive chef to develop new meat dishes and improve existing recipes
  • Implement and maintain quality control measures for all meat products
  • Ensure proper labeling and packaging of meat items for storage and distribution
  • Stay updated on industry trends and new butchery techniques

Qualifications

  • Minimum of 5 years of experience as a butcher, with at least 2 years in a leadership role
  • Expert knife skills and in-depth knowledge of various meat cutting and preparation techniques
  • Comprehensive understanding of different meat grades, quality indicators, and aging processes
  • Proficiency in preparing a wide variety of meat cuts, including local and international styles
  • Strong knowledge of food safety and sanitation practices
  • Culinary degree or equivalent experience in a professional kitchen setting
  • Current food safety certification (e.g., ServSafe)
  • Excellent inventory management and organizational skills
  • Proven leadership abilities and experience managing a team
