Job Description

Reporting to the Executive Chef, the Pastry Operations Manager is responsible for overseeing the daily execution, coordination, and operational management of pastry and baked goods production across the property.

This role is focused on production planning, kitchen leadership, finishing and bake-off execution, and cross-department coordination, ensuring all pastry and dessert items are executed consistently, efficiently, and to standard across all outlets. While Restaurant Chefs retain creative ownership and direction of dessert menus, the Pastry Operations Manager ensures those concepts are operationally supported through the right systems, staffing, ingredients, and execution.

This is a hands-on kitchen management role with a strong operational lens, ideal for a leader who thrives on structure, consistency, and execution excellence rather than creative concept development.

Key Responsibilities

Pastry Production & Execution

  • Oversee the daily production, finishing, baking, and execution of all pastry and baked goods across the property.
  • Lead a small pastry team responsible for bake-off, finishing, plating support, and service readiness.
  • Ensure all pastry items are executed consistently according to established standards and chef direction.
  • Coordinate production schedules to support restaurant service, banquets, events, and in-room dining.
  • Maintain a strong presence in the kitchen during key production and service periods.

Coordination with Restaurant Chefs

  • Act as the primary liaison between Restaurant Chefs and the pastry production team.
  • Coordinate pastry and dessert requirements based on menu direction provided by Restaurant Chefs.
  • Ensure all required ingredients, components, and execution details are in place to support dessert menus.
  • Support Chefs in maintaining consistency and execution standards across all outlets.

Kitchen Leadership & Team Management

  • Supervise, train, schedule, and support pastry cooks and production staff.
  • Provide clear direction, coaching, and regular performance feedback to the team.
  • Ensure efficient kitchen organization, clear workflows, and effective task delegation.
  • Foster a professional, respectful, and collaborative kitchen environment aligned with Rimrock values.

Operational Systems & Standards

  • Maintain and enforce SOPs related to pastry production, bake-off procedures, storage, labeling, and food safety.
  • Ensure full compliance with health, safety, and sanitation standards.
  • Support the training of non-pastry kitchen teams on proper handling or finishing of pastry items where required.
  • Identify opportunities to improve efficiency, consistency, and execution through systems and processes.

Inventory, Planning & Cost Control

  • Manage inventory, ordering, and par levels for pastry and baking ingredients.
  • Monitor food cost, waste, yield, and portion control related to pastry production.
  • Support forecasting and production planning aligned with business levels and menu needs.
  • Maintain accurate records and contribute to cost-control initiatives within the culinary department.

Qualifications

What You Bring

  • Minimum 5 years of experience in kitchen management, with a strong focus on pastry operations or pastry-adjacent production.
  • Proven experience leading and supervising kitchen teams in high-volume or multi-outlet environments.
  • Strong operational knowledge of pastry production, bake-off systems, and finishing techniques.
  • Ability to execute and manage pastry programs based on direction from senior culinary leadership.
  • Excellent organizational, communication, and coordination skills.
  • Solid understanding of food safety, sanitation, and kitchen operational standards.
  • Calm, solutions-focused approach in fast-paced service environments.

Bonus if You Bring

  • Experience in a hotel, resort, or multi-outlet food & beverage environment.
  • Experience supporting banquet and event pastry production.
  • Comfort working with a mix of in-house production and prepared or par-baked items.
  • Experience supporting operational rollouts, SOP development, or kitchen systems improvements.

Physical Demands

  • Ability to stand for extended periods and work in a kitchen environment.
  • Frequent bending, lifting, and carrying of food products and kitchen equipment (up to 25 kg / 55 lbs).
  • Manual dexterity required for pastry finishing, plating, and production tasks.
  • Ability to work early mornings, evenings, weekends, and holidays based on operational needs.

Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
