Job Description

  • Has knowledge of all bakery and pastry  ingredients, baking  techniques and presentation
  • Ensure mis en plan is properly done as per menu’s to manage smooth operation
  • Check daily business forecast and plan food production levels
  • Ensure food production is done according to the standard recipes at all time
  • Ensure par stock levels are check daily and  follow inventory
  • Make purchase request on daily basis and check quality of food products receiving
  • Control the food wastage 
  • Responsible to identify the training needs and make calendar
  • Follow the schedule to conduct training as per Sofitel guidelines
  • Ensure nominated ambassadors attending training as per schedule 
  • Responsible for implements food safety standards and policies at all the time as per guidelines
  • Ensure all ambassadors are  following HACCP standards on regular basis 
  • Responsible for guest satisfaction in line with food safety and food quality

Qualifications

  • Diploma/Degree from in Pastry Arts, or equivalent training.
  • Proven experience minimum of 10  years of relevant experience in the professional kitchen
  • In-depth knowledge of pastry techniques, baking principles, and ingredient functions Basic computer knowledge
