Lead and manage the Italian kitchen, ensuring consistent quality, taste, and presentation of all dishes.
Design and regularly update seasonal menus that reflect authentic Italian culinary traditions with a modern flair.
Maintain the highest standards of food hygiene, safety, and quality control in accordance with UAE regulations and Rixos brand guidelines.
Train, supervise, and mentor kitchen staff, ensuring high levels of performance, discipline, and team collaboration.
Collaborate with the Executive Chef and F&B team for menu planning, events, and special promotions.
Control food costs by managing inventory, portioning, and minimizing waste.
Source premium ingredients and build strong relationships with trusted suppliers.
Ensure that kitchen operations run smoothly during service hours, especially during peak times.
Handle guest feedback with professionalism and make improvements based on suggestions.
Stay current with culinary trends and integrate creative ideas to enhance the guest dining experience.
Minimum 5 years’ experience as an Italian Chef de Cuisine or in a senior culinary role within a luxury hotel or fine dining Italian restaurant.
Culinary degree or diploma from a recognized culinary school.
In-depth knowledge of traditional and modern Italian cuisine, including pasta, risotto, antipasti, and regional specialties.
Strong leadership, organizational, and interpersonal skills.
Excellent communication in English; knowledge of Italian is a plus.
Proven ability to manage a high-volume kitchen while maintaining quality.
Sound understanding of food safety, HACCP, and hygiene practices.
Flexibility to work varied shifts, including weekends and public holidays.
