Job Description

At our Michelin One Key-awarded luxury hotel (two years running), we live by the credo Make It Count. As Head Baker, you’ll lead all in-house bakery operations, producing hand-crafted breads and viennoiserie that reflect precision, pride, and artistry. Working through the early hours alongside a skilled team, you’ll balance tradition and innovation—supporting all outlets and collaborating closely with the Executive and Pastry Chefs to shape seasonal offerings, inspire consistency, and uphold the standards that define our culinary excellence.

Competitive Salary: $74,000 - $78,000 gross annually, based on previous experience & education

Job Duties Include:

  • Oversee daily operations of the Pastry Bake Shop, ensuring consistent food quality, cost control, and alignment with Fairmont brand standards across all banquet and outlet production
  • Lead and supervise the pastry team in the preparation and presentation of baked goods, desserts, Viennoiserie, and specialty items, fostering a high-performing and engaged kitchen culture
  • Review banquet event orders and production sheets, collaborating with Banquets, Conference Services, and Gold Floor teams to ensure efficient, timely execution
  • Develop, implement, and enforce standardized recipes, food safety, sanitation, and inventory controls to minimize waste and ensure compliance
  • Support the Executive Pastry Chef with scheduling, labor planning, budgeting, menu development, and operational leadership, assuming responsibility in their absence

Qualifications

Your Skills & Qualifications:

  • Minimum 5 years of progressive culinary leadership experience within a luxury hotel or high-volume kitchen environment
  • Strategic and operational expertise in labor management, food cost control, and productivity optimization
  • Strong organizational and administrative skills, including proficiency with systems such as Birchstreet, Watson, and payroll management platforms
  • Deep knowledge of menu development, culinary trends, and guest-centered innovation, ensuring an exceptional dining experience
  • Proficiency in Microsoft Word, Excel, and PowerPoint
  • Comprehensive understanding of wine, viticulture, and beverage pairings (considered an asset)
  • Ambition and readiness to advance to Executive Chef within Accor, demonstrating professional maturity and leadership acumen
  • Red Seal Certification (Journeyperson’s papers) or recognized international equivalent required; candidates without Red Seal may complete Rouxbe Culinary Foundations Level 1 & 2, and Introduction to Baking & Pastry within six months of employment
  • Valid Canadian Food Handling Certification
  • Strong financial acumen, including expertise in labor and food cost management
  • Exceptional leadership, organizational, time management, and communication skills, with the ability to inspire a large brigade

Physical Aspects of Position (include but are not limited to):

  • Constant standing and walking throughout shift
  • Physically fit and able to work well under pressure
  • Able to push, pull, carry, and lift up to 50+ lbs
  • Able to bend and kneel comfortably
  • Reaching above and below shoulder level
  • Working in loud environments, with exposure to hot, humid, and cold conditions
  • Able to withstand exposure to kitchen equipment, including large and small ovens, stoves, steam kettles, mixers, sheeters, fryers, rational ovens, steamers, tilt skillets, fridges, freezers, and blast freezers
