Job Description

F&B Operational Manager

Be part of the opening leadership team of Mercure Oradea, a contemporary midscale hotel featuring 90 rooms, four conference halls, a spa & wellness center, restaurant, café, lobby bar, and full daily F&B service including breakfast and events.

As F&B Operational Manager, you will oversee the day-to-day performance of all food & beverage outlets — ensuring excellent service, consistent brand standards, strong financial results, and an engaging Heartist culture.

You will work closely with the Executive Chef and the hotel’s leadership team to deliver memorable dining experiences and profitable operations.

You will play a key role from the pre-opening phase through the hotel’s launch and beyond, building procedures, training the team, and ensuring smooth, high-quality service across all F&B touchpoints.

You will be responsible for:

F&B Operations & Guest Experience

  • Oversee daily operations in all F&B outlets: restaurant, café, lobby bar, breakfast service, room service, and banqueting.
  • Implement and uphold Accor F&B Brand Standards, ensuring a consistent and high-quality guest experience.
  • Ensure service excellence by actively engaging with guests, resolving issues, and driving continuous improvement.
  • Supervise set-up, service, and breakdown for events and conference operations.
  • Maintain atmosphere and brand identity across outlets (music, lighting, cleanliness, guest flow).

Team Leadership & Training

  • Recruit, train, and motivate the F&B team in line with Accor’s Heartist culture.
  • Create shift schedules, assign duties, and monitor performance.
  • Conduct regular briefings, service training, upselling programs, and food safety refreshers.
  • Inspire and develop team members, supporting career growth and internal promotion.

Financial Performance & Cost Control

  • Work with the Executive Chef to manage food cost, beverage cost, inventory, and wastage.
  • Monitor daily revenue, average check, service efficiency, and operational KPIs.
  • Ensure accurate stock management, purchasing, and supplier coordination.
  • Contribute to budgeting and monthly performance reviews.

Menu Development & Quality Assurance

  • Collaborate with the Executive Chef on menu engineering, pricing, and seasonal promotions.
  • Ensure consistent product presentation and portion control.
  • Coordinate guest feedback analysis to improve menu and service offerings.

Health, Safety & Compliance

  • Guarantee full compliance with HACCP, Accor Safety & Food Regulations, and local laws.
  • Oversee cleanliness, hygiene, equipment functionality, and maintenance across all F&B areas.
  • Conduct regular inspections and lead audits for food safety and operational standards.

Pre-Opening Responsibilities

  • Develop all F&B operational procedures and standards for opening.
  • Assist in selecting equipment, tableware, uniforms, and operational supplies.
  • Build the F&B training framework, onboarding materials, and opening service sequences.
  • Support menu development, pricing strategy, bar program, and breakfast concept rollout.
  • Organize soft-opening service trials and operational simulations.

Qualifications

  • Minimum 3 years of experience in F&B operations, preferably with leadership experience in an international hotel environment.
  • Strong knowledge of restaurant operations, banqueting, bar management, and breakfast service.
  • Experience with HACCP and food safety compliance.
  • Excellent leadership, communication, and organizational skills.
  • Proficiency in English and Romanian (spoken and written); additional languages are an advantage.
  • Familiarity with Accor service standards, POS systems, and operational procedures is a plus.
  • Passion for hospitality, problem-solving mindset, and strong attention to detail.
