Job Description

What do we expect from you?

Mondrian Abu Dhabi is gearing up for an exciting opening, and we are looking for an experienced Director of Culinary to lead the culinary division during the pre-opening phase. As the Director of Culinary, you will be the driving force behind the development and delivery of our diverse and innovative culinary experiences. From overseeing kitchen operations to creating unique dining concepts, your leadership will set the stage for culinary excellence and elevate the guest experience from day one.

How your day looks like:

  • Lead and oversee the pre-opening efforts of the culinary division, including recruitment, training, operational setup, and team development.
  • Create and implement innovative, high-quality culinary concepts that reflect the bold, creative spirit of Mondrian.
  • Manage kitchen operations, ensuring consistency, quality, and innovation in every dish served.
  • Develop and maintain Mondrian’s culinary standards, ensuring they are reflected in all aspects of food preparation and service.
  • Foster a collaborative and high-performance culture within the culinary team, motivating staff to deliver exceptional results.
  • Ensure effective inventory and cost management, optimizing budgets while maintaining premium quality ingredients.
  • Collaborate with other departments to ensure seamless hotel-wide operations, particularly in aligning culinary offerings with guest experience.
  • Monitor guest feedback and food quality metrics, proactively addressing opportunities for improvement.
  • Drive sustainability initiatives within the culinary division, including sourcing locally and reducing waste.
  • Ensure compliance with health, safety, and environmental standards, as well as local regulations.

This role requires a dynamic leader with strong culinary expertise, an eye for innovation, and a passion for creating exceptional dining experiences in a luxury hotel setting.


Qualifications

  • Minimum of 5 years of experience in Culinary management, with at least 3 years in a Director-level role, ideally in a luxury or lifestyle hotel environment.
  • Experience working in a truly global work environment is essential.
  • Prior pre-opening experience is highly preferred, with a strong understanding of the operational and logistical aspects involved.
  • Expertise in luxury dining and innovative food and beverage concepts.
  • Strong customer orientation, emotional intelligence, and credibility, with a sense of commitment and accountability.
  • Exceptional stakeholder management skills.
  • Leadership skills that inspire and unify teams around common goals, striving for excellence in both quality and financial outcomes.
  • Strong financial management experience with the ability to control budgets and achieve cost efficiencies.
  • A deep passion for creating exceptional dining experiences and pushing the boundaries of culinary innovation.
  • Knowledge of food trends, sustainability initiatives, and industry best practices.
  • Knowledge of sustainability practices and current culinary trends.
  • Familiarity with kitchen management software and POS systems is a plus.
  • Creative thinking and the ability to embrace innovation while maintaining operational excellence.
