About Orient Express La Minerva

Considered as the beloved capital of the Orient Express legend, Rome is the first Orient Express hotel, La Minerva, in 2025. Orient Express has entrusted the interior architecture and artistic direction of the hotel Hugo Toro. The former Palazzo Fonseca is a sumptuous 17th-century palace with a huge, majestic façade. A place of memory still adorned with its Roman columns, sculptures by Rinaldo Rinaldi, a disciple of Canova, and the fascinating goddess Minerva. At the end of 2024, a new décor and interior inspired by the Roman domus and the riches of the "Eternal City" will be revealed with a new touch of contemporary elegance.


Job Description

Position Overview

Our Chef de Partie – Pastry is a key member of the Pastry Team, dedicated to ensuring excellence, creativity, and consistency within the Pastry section in line with the standards of a 5-star luxury hotel.

This role supports the Pastry Chef in overseeing pastry operations, ensuring the highest quality of desserts, baked goods, and pastry items for all hotel outlets, including restaurants, banqueting, and in-room dining. The Chef de Partie – Pastry combines technical expertise, artistic presentation, and strong organizational skills to maintain the hotel’s culinary reputation while contributing to innovation and guest satisfaction.

The position requires precision, creativity, and a strong commitment to hygiene, safety, and luxury culinary standards at all times.

Key Responsibilities

• Manage and oversee the assigned pastry section, ensuring smooth and efficient daily operations.
• Prepare and present high-quality pastries, desserts, breads, and baked goods according to hotel standards and recipes.
• Ensure consistency, portioning, and artistic presentation of all pastry items.
• Support the development and execution of seasonal menus, special events, and bespoke guest requests.
• Monitor food storage, labeling, and stock rotation in compliance with HACCP procedures.
• Maintain impeccable cleanliness and organization of pastry workstations, equipment, and storage areas.
• Supervise and support Demi Chefs and Commis Chefs within the pastry section.
• Collaborate with other kitchen sections and F&B teams to ensure seamless service across all outlets.
• Monitor stock levels and report shortages or equipment issues promptly to the Head Pastry Chef or Executive Chef.
• Minimize waste and ensure proper handling and storage of all ingredients and finished products.
• Ensure full compliance with hotel safety, hygiene, and local health regulations.
• Uphold the highest standards of grooming, uniform presentation, and professional conduct.
• Participate in training sessions and continuously develop pastry techniques, trends, and product knowledge.


Qualifications

• Previous experience as Chef de Partie – Pastry or strong Demi Chef de Partie Pastry experience in a luxury hotel, pastry boutique, or high-end restaurant is preferred.
• Strong knowledge of pastry techniques, baking, chocolate work, and dessert presentation.
• Creativity and attention to detail with a passion for pastry arts.
• Solid understanding of food safety standards and HACCP procedures.
• Good command of Italian and basic knowledge of English (additional languages are considered a plus).
• Strong organizational and time-management skills.
• Ability to work efficiently under pressure in a fast-paced luxury environment.
• Team-oriented mindset with effective communication skills.
• Flexibility to work shifts, weekends, and holidays.
• Relevant culinary or pastry certification is considered an advantage.
• Legal right to work in Italy.
