What you will be doing:

  • Be instrumental in managing food costs and production control to reduce wastage
  • Supervise, provide guidance and training to culinary team in all food preparation
  • Assist with creating menu recipes, pictures and training materials to ensure consistency, efficiency to meet the set standards.
  • Guide the Fairmont Gold team on all Fairmont standards, train employees on menus and cooking procedures
  • Follow food safety requirements.
  • Maintain proper rotation of product in all chillers to minimize spoilage
  • Follow all safety and sanitation policies when handling food
  • Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and Food Safety guidelines. Ensure that all ECOSURE standards and processes are completed on a daily basis, this includes but isn’t limited to filling out daily temperature logs, labelling and dating of items as well ensuring food storage areas are cleaned daily.
  • Food preparation and cooking, plating, presentation
  • Apply 5 Diamond and 5 Star Service Standards at all times

Qualifications

Your experience and skills include:

  • Creative and passionate about food and customer service
  • Is a self-starter and displays initiative and curiosity for all food related items
  • Able to give and receive clear direction, set expectations and provide training to junior team members
  • Able to work without supervision and display sound decision making skills
  • Ability to do a variety of knives cuts consistently and precisely
  • Ability to read, understand and follow recipes within the guidelines
  • Ability to read a prep list and determine in what sequence of order jobs should be completed
  • Ability to multi task, prioritize and manage time efficiently to ensure job complete
  • Ability to listen and follow directions precisely to achieve the end result
  • Able to work in a fast paced, high-pressure environment
  • Excellent interpersonal and communication skills; a team player.
  • Completion of a recognized culinary program an asset
  • Must be Food Safe Certified
  • A neat, well-groomed appearance as per hotel standards
  • Must be available to work a variety of shifts including evenings, weekends and holidays
  • Previous experience in a Fairmont Gold VIP lounge food service with high touch guests is an strong asset
  • Awareness of exceptional service for the VIP guests and availability of accommodating their special request followed by chef’s guideline    
  • Career minded with strong personal initiative and a desire to achieve the department’s vision and goal
  • Physically fit to stand for long periods of time and lift 20kg regularly throughout a shift.
