Job Description

Summary of Responsibilities:

Reporting to the Director of Food & Beverage, responsibilities and essential job functions include, but are not limited to, the following:

  • Consistently offer professional, engaging and proactive customer service while supporting fellow Colleagues
  • Demonstrate Fairmont core values in all interactions
  • Motivate, lead, coach and manage all aspects of team members’ performance towards achieving exceptional guest service and employee satisfaction results
  • Assist in leading all aspects of daily food and beverage operations providing the necessary support to both Hotel Executive and F&B department leaders and colleagues
  • Reviews staffing levels to ensure service level commitments and labor costs goals are met
  • Assists with the development of the food and beverage operating strategy and leads its execution
  • Assist in the preparation, successful implementation and execution of the annual F&B budget, capital plan and strategic projects as required
  • Reviews financial reports and statements to determine ensure F&B is performing against budgeted targets
  • Assist in the development of menus, wine lists, specifications and standards for all food and beverage operations
  • Works with direct reports to develop and implement F&B promotions and presentations
  • Utilize information from comment cards, guest satisfaction results, pre- and post-convention meetings and other data to identify areas of improvement and ensure F&B teams are accountable for results
  • Estimate food, liquor, wine, and other beverage consumption in order to anticipate amounts to be purchased or requisitioned; purchase equipment and related supplies
  • Ensure the implementation and colleague compliance with cash control and liquor control policies
  • Ensure that regular, on-going communication occurs in all areas of food and beverage (e.g., shifts briefings, department meetings,) to ensure that colleagues re well informed and are prepared to deliver outstanding service
  • Develop and maintain close and effective working relationship with all supporting departments
  • Follow and ensure compliance with all corporate, hotel and departmental policies and procedures
  • Participate in hotel committees
  • Perform any other function related duties and projects as assigned

Qualifications

Qualifications:

The successful candidate should:

  • Five to seven years’ experience in all facets of hotel and food & beverage operations and at least 1 year in a similar position or a minimum of 5 years in a senior restaurant manager role in a luxury hotel environment is required
  • A degree in Hospitality Management or Restaurant Management is required
  • Two year’s international experience in a luxury hotel is strongly preferred
  • Demonstrated track record of high guest service ratings and employee satisfaction levels in a multi-faceted F&B operation
  • Demonstrate a solid past record of successful F&B financial management
  • Proven  a highly effective leader, possessing a high degree of interpersonal and problem solving abilities
  • Proven ability to focus attention on guest needs, remaining calm and courteous at all times
  • Demonstrate excellent written and verbal communication skills and strong presentation skills 
  • Proven strong supervisory/leadership skills and the ability to meet high levels of service excellence
  • Proven ability to work cohesively as part of a team in a multi-cultural, diverse environment
  • Proven ability to work efficiently in a demanding and fast paced environment
  • Strong working knowledge of Delphi, POS System and MS Office programs
  • Strong work ethic, highly responsible, reliable and the ability to extended hours including evenings, weekends and public holidays is required
