- Effectuer dans les délais : les préparations, les cuissons, les dressages des composantes d'un menu, dans le respect des fiches techniques,
- Réaliser un service à la carte : priorisation des bons, organisations de cuissons multiples, gestion du Pass,
- Être le/la garant.e de la qualité en s’assurant que chaque plat répond aux exigences en termes de goût, de texture et de présentation,
- Encadrer et développer les Commis et Chefs de Partie, assurer la formation des nouveaux collaborateurs,
- Assurer la gestion quotidienne des stocks et être en charge de la réduction des pertes de matières premières,
- Contrôler la propreté du lieu de travail et de la sécurité alimentaire en respectant, au quotidien, les règles d'hygiène HACCP ainsi que l’utilisation adéquate du matériel,
- Participer aux inventaires mensuels.
- Avez une première expérience confirmée au poste de Chef de partie
- Maîtriser les différentes techniques de production culinaire nécessaires à des environnements très variés (menu bistronomique, carte room service etc).
- Avez une capacité à travailler efficacement en équipe
- Maîtrisez les normes d’hygiène et de propreté
- Êtes rigoureu(se)x et bénéficiez d'un excellent sens de l’organisation
- Êtes pédagogue notamment quant à la transmission de votre savoir-faire
- Êtes autonome pour réaliser un service à la carte
