Our prestigious hotel is centrally located in Cairns City, offering 324 elegantly appointed rooms, 18 versatile meeting spaces, and Coco’s Kitchen and Bar, where the menu highlights local fish, seafood, and premium regional produce. We are seeking a talented Demi Chef to support our culinary leadership team with daily kitchen operations, food preparation, and upholding the highest standards of quality and hygiene. This is an excellent opportunity for a skilled Commis Chef looking to advance their career with an industry leader. Key Responsibilities:
- Assist our culinary leaders with daily kitchen operations and food preparation
- Oversee assigned sections, ensuring efficient and productive operation
- Maintain a clean, hygienic work environment while ensuring top-quality food and presentation standards
- Prepare high-quality dishes across various kitchen sections, with a strong focus on a la carte, buffet, larder, mise-en-place, room service, and banquets.
- Monitor stock rotation, minimize waste, and ensure stock control procedures are followed
- Lead by example, instruct and develop apprentices, and liaise with chefs to ensure smooth kitchen operations

Key Requirements:
- Trade qualifications and previous experience in the hotel industry preferred.
- Extensive experience in a la carte
- Knowledge of food safety requirements.

- Excellent time management skills with the ability to multitask.
- Flexible and able to embrace and respond effectively to change.
