Pullman Quay Grand Sydney Harbour is preparing to launch Flaminia, our new signature restaurant overlooking the iconic Circular Quay. Created in collaboration with the acclaimed Pilu restaurant, Flaminia will showcase refined Italian dining with a contemporary Australian influence — bringing craftsmanship, regional authenticity, and modern elegance to the harbourfront.

We are seeking a skilled and motivated Demi Chef to join our opening team. In this role, you will support the Chef de Partie in managing your section, contribute to high-quality food preparation, and help deliver an elevated dining experience that reflects Flaminia’s sophisticated concept. This is an exciting opportunity to be part of a high-profile restaurant from pre-opening through to ongoing success.

What you’ll bring

• Solid experience in a fast-paced / fine-dining kitchen, ideally with exposure to Italian cuisine
• Strong technical skills and a passion for produce-driven cooking
• A commitment to maintaining high standards of quality, consistency, and food safety
• The ability to work efficiently, follow direction, and support junior team members
• Creativity, dedication, and a genuine passion for hospitality
