Pullman and Mercure Brisbane King George Square is located in the CBD and is Brisbane’s largest contemporary style hotel, featuring 438 guestrooms, extensive conferencing facilities for up to 1000 people, and several dining venues including Goldfinch Restaurant and Street Café as well as our award winning Rooftop Bar, Sixteen Antlers.

We are currently seeking to recruit passionate Commis Chef / Demi Chef to join our friendly & professional Kitchen team.

Job Description

Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:

  • Ensuring all food produced is in line with departmental standards and kitchen recipes
  • Preparing and cooking all food orders with a sense of urgency
  • Organising an assigned section and ensuring it runs efficiently and productively
  • Ensuring the area of work is kept clean at all times in accordance with health regulations 
  • Working closely with senior chefs
  • Working within a team environment


Your experience and skills include:

  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively and collectively as part of a team
  • A commercial cookery qualification with previous experience working in a hotel or restaurant environment 
  • Experience providing quality food and presentation of all dishes
  • Knowledge of WHS and food safety policies and procedures
  • Relevant food preparation and service knowledge
  • The ability to work unsupervised with excellent time management skills
  • You have current working rights within Australia
  • Available to work a rotating 7day roster incuding early mornings, late evenings, weekends and public holidays
