We invite you to join the world of luxury hospitality at Fairmont Southampton as our new Executive Chief Steward. The Executive Chief Steward is responsible for the leadership and oversight of all stewarding and setup operations across Fairmont Southampton. This includes ensuring the highest standards of cleanliness, sanitation, and organization throughout all kitchens, restaurants, banqueting spaces, and event venues.
The role is crucial in supporting culinary and F&B operations by maintaining equipment, managing inventory, optimizing processes, and leading a well-trained, efficient stewarding team. This leader must consistently uphold luxury standards, enforce stringent hygiene practices, and ensure the department operates safely, efficiently, and cost-effectively.
What you will be doing:
Stewarding Operations & Hygiene Management
- Oversee daily operations of the stewarding and setup department, ensuring immaculate cleaning and sanitization of all kitchens, dishware, silverware, glassware, and equipment.
- Maintain the highest hygiene and sanitation standards in full compliance with local regulations, brand policies, and food safety guidelines.
- Ensure proper operation, cleaning, and maintenance of all kitchen equipment and dishwashing systems.
Setup & Event Support
- Oversee the complete setup and breakdown of banqueting, restaurant, event, and beach venues according to established standards.
- Partner with F&B leadership to ensure consistent, luxury-level setup quality and cleanliness for all dining and event experiences.
- Establish and enforce setup standards in conjunction with F&B management.
Inventory, Equipment & Waste Management
- Manage inventory of stewarding supplies, chemicals, tools, and F&B support equipment.
- Implement strong cost-control measures and ensure accurate tracking and requisitioning of supplies.
- Oversee F&B waste management processes, ensuring proper disposal, recycling, and sustainability practices.
- Coordinate with Engineering to ensure timely preventive maintenance of all stewarding equipment.
Team Leadership & Training
- Lead, coach, train, and supervise the stewarding team to ensure high productivity, efficiency, morale, and service excellence.
- Conduct regular training on sanitation, safety, equipment handling, and chemical use.
- Promote a culture of teamwork, accountability, and continuous improvement within the department.
- Lead by example through hands-on training and coaching within the stewarding team, ensuring all training is properly documented and maintained.
Policy Development & Cross-Department Collaboration
- Develop and implement departmental SOPs, procedures, and safety protocols.
- Collaborate closely with the Executive Chef and F&B leaders to support seamless kitchen and dining operations.
- Participate in operational planning, cost control initiatives, and continuous improvement programs.
Safety, Hygiene & Compliance
- Ensure full compliance with all local health regulations, food safety standards, and Fairmont / Accor brand requirements across all stewarding and setup operations.
- Establish, implement, and continuously monitor hygiene, sanitation, and safety programs for all kitchens, stewarding areas, and event venues.
- Oversee the safe handling, storage, labeling, and inventory control of all cleaning chemicals in accordance with Safety Data Sheets (SDS) and hotel standards.
- Conduct regular inspections, audits, and risk assessments to identify gaps in safety, sanitation, and operational compliance, implementing corrective actions as required.
- Ensure all stewarding equipment, machinery, and facilities are operated safely and maintained in compliance with safety and engineering standards.
- Lead incident reporting, investigation, and follow-up for accidents, injuries, near misses, and safety concerns within the stewarding department.
- Enforce hotel fire, emergency, and evacuation procedures, ensuring the stewarding team is trained, informed, and prepared at all times.
- Maintain professional appearance, grooming standards, and conduct in line with Fairmont brand expectations.
- Proactively report and escalate maintenance issues, safety hazards, and compliance risks to Engineering, Culinary leadership, and Executive Management as required.
- Actively enforce hygiene standards, lead and support HACCP audits in close coordination with the Hygiene Auditor, and ensure all HACCP documentation is accurately maintained and stored in an organized, mobile filing system.

Experience
- 5+ years in a supervisory or management role within stewarding or hotel operations, preferably in a luxury hotel or resort environment.
- Strong background in sanitation, hygiene, equipment handling, and large-scale F&B operations.
Education
- Diploma or certificate in Hospitality Management, Culinary Operations, Sanitation, or related field preferred.
- Food Safety and Sanitation Certifications (e.g., ServSafe or equivalent).

- Thorough knowledge of stewarding operations, kitchen hygiene standards, and safety protocols.
- Strong leadership skills with a hands-on, collaborative approach.
