Job Description

As a Chef de Cuisine, you will show your leadership and interpersonal strengths to maximize the Food and Beverage Operations and ensure an exceptional guest journey.

What you will be doing:

Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:    

  • Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues 
  • Oversee Culinary Operations for Outlet kitchens including, Laurel Court, Tonga Room, and In Room Dining 
  • Conduct daily shift briefings to Kitchen and Stewarding Colleagues 
  • Manage inventories, pricing, cost controls, requisitioning and the issuing of supplies and equipment for food production 
  • Cost menus accurately following the Fairmont SOP
  • Act as a creative force in menu development
  • Ensure all kitchen and stewarding Colleagues are aware of standards and expectations 
  • Liaise daily with the Outlet Managers to keep open lines of communication regarding guest feedback 
  • Maintain the quality and enhance the presentation of food products through creative menu development
  • Maintain cleanliness and proper rotation of product in chillers, dry storage, and service lines 
  • Balance operational, administrative and colleague needs      
  • Ensure proper staffing and scheduling in accordance with productivity guidelines 
  • Follow kitchen policies, procedures and service standards 
  • Follow all safety and sanitation policies when handling food and beverage per state regulations as well as third party auditors
  • Other duties as assigned
  • Salary Range: $98,000 to $131,000 USD Gross Annually

Your experience and skills include:

  • Previous leadership experience in the culinary field required 
  • Diploma Certification in a Culinary discipline an asset 
  • Computer literate in Microsoft Window applications required 
  • Strong interpersonal and problem-solving abilities 
  • Highly responsible & reliable 
  • Ability to work well under pressure in a fast-paced environment 
  • Ability to work cohesively as part of a team 
  • Ability to focus attention on guest needs, remaining calm and courteous at all times

Physical Aspects of Position (include but are not limited to): 

  • Constant standing and walking throughout shift 
  • Frequent lifting and carrying up to 40 lbs 
  • Frequent kneeling, pushing, pulling, lifting 
  • Occasional ascending or descending ladders, stairs and ramps
