Position Summary
Fairmont Mumbai seeks a distinguished Master Chef – Indian Cuisine (Awadhi Specialist) to lead the culinary vision and execution of its signature Indian dining experiences. As a custodian of India's rich culinary heritage, the Master Chef will be responsible for showcasing the refinement, authenticity, and artistry of Awadhi cuisine while delivering exceptional luxury dining experiences that reflect Fairmont's commitment to excellence.
The ideal candidate will possess deep expertise in traditional Awadhi gastronomy, strong leadership capabilities, and a proven track record in luxury hospitality, fine dining, or renowned destination restaurants. This individual will serve as a culinary ambassador for the hotel, elevating its reputation as a premier destination for Indian cuisine.
Key Responsibilities
Culinary Leadership
- Lead the culinary strategy, development, and execution of all Awadhi and specialty Indian cuisine offerings.
- Preserve and promote the authenticity of Awadhi culinary traditions while introducing contemporary interpretations suitable for luxury dining.
- Create signature dishes and bespoke dining experiences that distinguish Fairmont Mumbai in the luxury hospitality market.
- Ensure exceptional standards of food quality, presentation, consistency, and guest satisfaction.
Menu Development & Innovation
- Design and curate seasonal menus, tasting menus, chef's specials, festive promotions, and exclusive culinary events.
- Research and revive traditional recipes, rare ingredients, and royal cooking techniques.
- Collaborate with hotel leadership to conceptualize innovative dining experiences and culinary activations.
- Stay abreast of culinary trends while maintaining the integrity of traditional Indian cuisine.
Team Leadership & Development
- Lead, mentor, and inspire the Indian culinary brigade.
- Develop and conduct training programs focused on Awadhi cuisine, traditional cooking methods, spice mastery, kebab craftsmanship, biryanis, breads, and desserts.
- Foster a culture of excellence, innovation, discipline, and continuous development.
- Build succession plans and nurture emerging culinary talent.
Guest Engagement & Brand Representation
- Interact with VIP guests, dignitaries, celebrities, HNIs, and international travelers to create memorable and personalized dining experiences.
- Participate in media engagements, culinary festivals, chef collaborations, and promotional events.
- Represent Fairmont Mumbai as a culinary ambassador at local, national, and international platforms.
- Lead chef's tables, masterclasses, and exclusive gastronomic experiences.
Operational Excellence
- Ensure compliance with HACCP, food safety, hygiene, and sanitation standards.
- Maintain effective food cost management, inventory control, and waste reduction initiatives.
- Source and oversee premium ingredients and specialty products.
- Ensure efficient kitchen operations while maintaining luxury hospitality standards.
Qualifications & Experience
- Degree or Diploma in Culinary Arts, Hotel Management, or equivalent professional qualification.
- Recognized expertise in Awadhi cuisine, including Dum Pukht cooking, kebabs, kormas, nihari, biryanis, qaliyas, sheermal, warqi paratha, and traditional royal desserts.
- Experience working with celebrity chefs, Michelin-recognized chefs, or award-winning restaurants is highly desirable.
- Proven success in leading large culinary teams and delivering exceptional guest experiences.
