Key tasks

Se encarga de la preparación y la elaboración, según los procedimientos, del concepto de restauración, garantiza la aplicación de las reglas de higiene y de seguridad, especialmente las normas HACCP, vela por la limpieza y el orden de los espacios de trabajo y lugares de almacenamiento (cámaras frigoríficas, locales diversos, etc.). Comunica al equipo los platos de la carta, realiza la preparación de los platos, utiliza los equipamientos de la cocina y el lavavajillas, aporta innovaciones.Conoce los principios de almacenamiento y los aplica. Efectúa y valora el inventario Adapta el stock en función del consumo. Compra en función de la temporada, del precio, de la calidad Gestiona el pequeño material. Selecciona las innovaciones culinarias y tecnológicas adaptadas Calcula los ratios específicos de la cocina.

• Manages inventories and orders for food products, adapting stocks to variations in consumption

• Is in charge of calculating cooking ratios"

"• Ensures that the workplace and storage areas remain clean and tidy, and the safety of consumable goods by always respecting HACCP regulations
• Respects the instructions and safety guidelines for the equipment (s)he uses
• Applies the hotel's security regulations (in case of fire etc)
• Applies the ISO 9001 quality certification requirements that impact his/her role
• Respects the hotel's commitments to the ""Environment Charter"" (saving energy, recycling, sorting waste etc) and meets Ibis' ISO 14001 environmental commitments as applicable to the role, if the hotel is involved in the programme."
